TWD: Toasted Coconut Custard Tart

Or as Jeff called it this morning, TCCT.

This week's recipe was a little more involved than the simple cookies from last week, and I had forgotten to get some of the ingredients at the store last week and had some sick kids thrown in there too. So I got up early and got to work this morning. Many thanks to Beryl of Cinemon Girl for her excellent choice to bring a little bit of summer into our last month of winter! Visit her blog to get this recipe. I don't have a tart pan and couldn't find one to borrow, so I made mine in a pie pan instead. It would be much prettier in a tart pan, or even a springform pan, but I guess if we have to we'll eat something that looks more like pie, darn.

Here are my instructions for this dessert, and according to Jacob it's "very good!":
  • You wake up and want to get back in bed, but go downstairs anyways.
  • First you have to toast coconut.
  • Then you have to make your tart shell. Or tart pie/pie tart in my case, or whatever.
  • Then while that is in the freezer you make the custard, which then goes in the fridge.
  • You decide to shower and then you feed your children.
  • Then you bake your tart shell in your pie pan because you are silly.
  • Then you babysit some kids and pretend you have two sets of twins for 2.5 hours.
  • Then your kids take a nap, so then you can make your whipped topping.
  • Then when it is almost dinnertime you put the custard in the shell, realize it got thicker than you think it is supposed to and then just ignore it, put the whipped topping on top, add more toasted coconut to the top of that and make a little heart design so you can show how excited you are to LOVE this dessert. Take a picture, ignoring that the edges of the tart in the photo look black, when really they were just a nice brown.
  • Then take some to your friends, the ones you promised to share this treat with when you called them this morning.
  • Then EAT some!
